
Preheat oven to 400 degrees Fahrenheit.
In a bowl, combine cauliflower, olive oil, salt, pepper, garlic powder, smoked paprika, and chili flakes. Mix well.
Spread evenly on a baking sheet and bake at 400 degrees for 15 minutes until caramelized.
Remove from the oven and sprinkle the parmesan and minced onion. Bake for an additional 15 minutes.
Remove from the oven and garnish with fresh mint leaves.
Omit the salt to reduce the sodium content of this recipe
