Succotash with Poached Eggs

 3 Large Potatoes (blanched and drained)
 1 Large Onion (diced)
 3 Bell Peppers (any color, diced)
 1 Corn (canned, no added salt, washed and drained)
 1 tsp Garlic (minced)
 3 tbsp Extra Virgin Olive Oil
 ½ tsp Crushed Red Pepper Flakes
 Salt (optional)
 Pepper (to taste)
 Dried Thyme (to taste)

In a large nonstick pan, add olive oil and potatoes, saute until tender.

Next, add onions and garlic and saute it for five minutes. Then add bell peppers and corn and cook for another ten minutes.

Mix in all the seasonings.

Prepare the poached egg:

Get a pot of hot water when the water starts to boil add salt and 2 tablespoon of vinegar now crack eggs individually and carefully add to the water us a small bowl but before you add the eggs please make sure you stir the water in a circular motion after you add the eggs turn the heat to the low cook it for 3 minutes and then carefully take the egg out one at a time

Place the egg over the succotash, sprinkle some more ground pepper, and enjoy!
